Depending on the pasta (I prefer doing this with Ravioli, whole wheat spaghetti, fuzzeli e zitti) After the pasta is cooked I separate my dish from the families. I pour in a bit of Olive oil (virgin or extra virgin works, too. I prefer virgin) and stir it with the hot pasta. Then, I add in any slices of salami, sausage, or cheeses (Perfect timing as the oil and heat from the pasta melts the cheese over).
After that, I add in a light coating of sauce (tomato, alfedo, etc) on top, with sliced parmigiano cheese.
Now the sauce is what makes the pasta different; from putting it simply over the dish, to mixing it INTO the pasta and add-ins, can make the dish different, as well as the flavors!

Right now, it would be London. That's where I'm planning to go in the near-ish future, maybe next year or something. I really, really want to see that part of the world, for so many reasons, and I kind of wish I had enough money to get up and go these holidays. But alas. I think I could really do with a holiday right about now. I want to go away by myself to somewhere in the country, away from any sign of human development, and just be. I think that would make me really happy.
I worked nights in a historic hotel, former governors mansion. A building that's on ghost tours. (If a guest asked if the place was haunted, I'd reply that you pay extra for those rooms) . Working any old building all night there are creaks and groans, things shifting, temperature changes, wind...none of it ever spooked me.
One night when clocking in, near a basement kitchen I swore I saw a serving woman dressed in blue colonial garb climbing the stair case. I thought "oh there must be historical re-inactors in house" as I followed her up. Except ...with closer look there was no one there at all.
Next to me is a table, on which I can put my laptop and a good book. At the same time there is also a delicious fruit cocktail. I only hear the sound of waves, the seagulls and the sound of palm leaves moving in the wind...
I talk to myself the most. Not necessarily out loud, unless I'm practicing French, but I entertain myself and keep myself company a lot. I'm not crazy, it's just been my thing since I was really little. I've only ever had myslef to talk to until recently.

New York City. Either with my brothers or my best friends. And we'd see all the sights-- museums, monuments, galleries, landmarks, everything, and then every night we were there we'd go see a show on broadway. I would prefer it to be in the fall, because that's my favorite time of year, especially in this part of the country. I'm sure the city would be beautiful in those colors, or we could even venture upstate and see more rural sights.
Being a dream and all, it doesn't have to be realistic, hahaha.

if all things are sad and absurd, at least i have something to look forward to.
If I'm in the mood for some good cooking though, you can never go wrong with some spaghetti.
Warm sand, lots of sun dry air and large rocks... preferably with an oasis in the distance.
Alternatively, I would like one of those holidays on the Comoros with the stilted over the water houses with the glass floors... so you can see the fish :D
To be honest, at the moment I would stay home quite happily as long as I had Les here :|
But my dream vacation would definitely have to take place in my hometown; where my favourite food, favourite sight and favourite people are. I see myself travelling by taxi to my father's hometown and greeting all my cousins, grandma and step-brother. I walk to the backyard where there is nothing but ocean in the horizon and stone wall up to my knees. I step over it and dash towards the shimmering sea and hold myself back from diving in completely. So I'm just standing there, water above my ankles, and see these little fishies swimming around my legs.
Moments later I take back the taxi to my mother's hometown where I'll be staying for the rest of my vacation. I walk through the front gate and glance at this worn out tree at the corner where the clubhouse that my brothers and cousins made no longer exists. I enter the house and greet my grandma and aunt and before I go to sleep I check out the backyard where green grass and trees are boldly there. I imagine how we used to play here with our dogs and puppies and how we started a battle with the neighbourhood kids.
A dream vacation for me is to relive all those memories, I guess. Reminiscing about the past is my vacation after all.
Either gnocci or ziti in a very robust sauce, made with meatballs (a mixture of pork and beef) plus either Italian sausage or some well seasoned boneless pork country spare ribs, browned almost to burning; plus either pepperoni or stuffed pork chops; simmered for 2-4 hours the day before reheating and eating.
In 1994, I was lucky enough to visit Odense Denmark where Mr. Andersen lived and wrote. I toured his home, the museum and even had my picture taken with the original manuscript!! Very cool. I also own an original script of the Disney version, then ending of which is different still! And, last but not least, I have a mermaid tattoo on my ankle. Can you say "geek", anyone???
I got several. I enjoy The Wizard of Oz (Does that count as a fairy tale), Hansel and Gretal, Little Red Riding Hood, Humpty Dumpty, Sleeping Beauty, Cinderella, Snow White and the Seven Dwarfs, Snow White and Rose Red and Rapunzel are my favorite fairy tales. Does the Shrek film series counts as a fairy tale?

All the Holy Cross caf pasta dishes were spectacular, the best being Wednesday's Penne a la Vodka with chunks of ham in it. To this day, I have not found a sauce that's that good. Their white sauce was also wonderful, also had chunks of ham in it. Their red sauce was good, but not the greatest, the kind I can find in any Italian person's house.
Which brings me to the pasta from my house. That's the best. My parents make killer tomato sauce. So does my grandmother. My grandmother used to make my favourite, giso. It's like a pasta stew with carrots, peas and potatoes all cooked in a tomato sauce. It's fantastic.
I also can't resist Earl's Fettuccini a la Panna. White sauce, proscuitto and peas. To die for.
In addition, I'm fond of all stuffed cheese or cheese and spinach pastas like ravioli and tortellini and I can't resist pasta shells filled with cheese or canelloni.
I love pasta.
Those evenings give way to KFC, McDonald's, Jack in the Box--and, honestly, a whole lot emptier wallet.
But, my busy, busy friends: there is hope.
Something about an instant pasta just gets to me.
I don't know if its the loud, eccentric name. Maybe its the smooth dressing, or maybe its the fact that its one of the dishes I make the best, but instant pasta, when its so SUDDEN like that.. well, its alright by me.
If you want to know the absolute truth here it is…
One those days that I’m feeling completely uncreative, unimaginative, and unmotivated… it’s Stouffer’s Family Size Frozen Macaroni and Cheese baked at 400 for 50 minutes.
That’s my “go to meal”. Sad but true. I set it on the counter and tell my family, “There it is. Help yourself”.
But, just so you’ll know, I try to throw some kind of vegetable along with it for good measure (surely that counts for something).
That’s just the way things are some days.
From Calculus to self defeating behavior...to mean people, to me hurting other peoples feelings, awkward moments, stupid people, consequences to well intended actions, pets, not being selfish, privacy, double speak, subtext, prejudice, hatred, apathy, long winded authors, 2nd person POV, Athiests....
I could go on for at least an hour, if not more. There are so many things that don't make sense that I have to start wondering how much I need to just keep living and not worry about it. I am open to learn and experience things that don't make sense in order to find some sort of sense. Or maybe some things - like MC Escher or Salvidor Dali - aren't meant to make sense in order to cause expansion into the unknown or unforeseen possibilities
Things that don't make sense can inspire a great many things within the imagination, you know.
